Apple Pancakes
1 cup diced dried apples
2 teaspoons baking powder
1¾ cups water
5 tablespoons powdered eggs
1 tablespoon oil
½ cup nonfat dry milk
2 cups whole wheat flour
At Home:
- Combine apples, eggs, milk, flour and baking powder in a sealable plastic bag.
- Label with directions.
On the Trail:
- Add water to the flour mixture until combined.
- Bake the pancakes in a hot, lightly oiled skillet, turning when bubbles form on the surface.
- Serve with yogurt, maple syrup or brown sugar.
- Makes 4 large pancakes
Scrambled Ham and Egg
1¼ cup powered egg
6 ounces chopped ham
1 teaspoon parsley
¼ teaspoon black pepper
¼ cup grated cheese
1¼cup water
2 tablespoons oil or margarine
At Home:
- Combine powdered egg, parsley, black pepper and cheese in a sealable plastic bag.
- Package other ingredients separately.
- Place all ingredients in large sealable plastic bag.
- Label with directions.
On the Trail:
- Stir water into egg mixture until smooth.
- Place oil or margarine in frying pan.
- Heat over moderate flame.
- Add all ingredients to pan.
- Stir frequently until eggs are cooked.
- Makes 4 servings
Porridge
2/3 cup stone-ground yellow corn meal
1/2 cup shredded sharp cheddar cheese
1/2 cup nonfat dry milk
1 teaspoon soy sauce
1/4 cup wheat germ
2 cups water
At Home:
- Combine corn meal, milk and wheat germ in sealable plastic bag.
- Label with directions.
On the Trail:
- Place water in a sauce pan and stir in the corn meal mixture.
- Set pan over medium heat and stir constantly until the cereal begins to boil.
- Reduce heat and partially cover pan.
- Simmer and stir occasionally, 6 to 8 minutes.
- Stir in cheese and when melted add soy sauce.
- Remove from heat and serve
- Makes 2 servings
Onion and Potato Scramble
2 small potatoes
1 tablespoon oil
1 onion
½ cup powdered eggs
½ cup water
3 cloves garlic
At Home:
- Package uncut potatoes, onions and garlic together.
- Package powdered eggs.
- Combine all ingredients into large plastic bag.
- Label with directions.
On the Trail:
- Dice potatoes, mince onion and chop garlic.
- Add water to eggs and stir until smooth.
- In frying pan, cook potatoes, onions and garlic in oil, stirring frequently until brown.
- Pour eggs into frying pan with potato mixture.
- Cook over medium heat and stir until eggs are cooked.
- Makes 2 servings
Pasta Cake
¼ cup chopped dried apricots, apples or pears
½ pound spaghetti
2 tablespoons raisins
1 tablespoon orange juice
2½ tablespoons powered egg
2½ tablespoons water
dash of oil
At Home:
- Package the fruit in sealable plastic bag and all other ingredients separately.
- Combine all ingredients in a large plastic bag.
- Label with directions.
On the Trail:
- Add water to eggs and stir until smooth.
- Combine egg mixture with fruit, oil, spaghetti and juice.
- Work mixture so that it's moist all over and fruit is well distributed.
- Lightly oil frying pan and add pasta mixture.
- Cover pan and cook pasta over very low flame for about 10 minutes.
- Flip pasta cake using the lid.
- Cook an additional 10 minutes.
- Serve with brown sugar or yogurt.
- Makes 4 servings
